Not all of these risk assessments follow the guidelines of the Codex Alimentarius Commission, nor does their presence here indicate endorsement by the Food Safety Risk Analysis Clearinghouse.

This report describes an E. coli O157:H7 risk-based verification sampling program developed by FSIS. The program provides comprehensive verification of domestic ground beef servings and allocates more samples to establishments with a higher risk of causing E. coli O157:H7 illness. The objectives of the program were to increase the proportion of FSIS samples that were more likely to produce product contaminated with E. coli O157:H7, to allocate FSIS resources more efficiently by verifying a greater portion of the U.S. trim and ground beef supply with the same number of samples as previous, and to verify all samples at a reasonable frequency. Included in the report are the Executive Summary and the Response to Peer Review Comments.

A quantitative risk assessment was conducted in 2007 for the consumption of beef burgers containing Shiga toxin-producing Eschericha coli by children under the age of 16 in France. Bibliographical data and missing consumption data was obtained to perform the risk assessment, and a mathematical model was developed for an approximate calculation of the average probability of developing a haemolytic uraemic syndrome depending on the pathogen concentration in frozen meet, following the consumption at home of a beef burger bought frozen from the French food industry. This is a summary of the completed risk assessment, which can be found at the French Food Safety Agency website. The original risk assessment is in French.

The risk assessment described in this report models the occurrence of E. coli O157:H7 in cattle on the farm to the occurrence and extent of contaminated servings of cooked ground beef. The exposure assessment concludes that feedlot cattle (steers and heifers) have a higher prevalence of E. coli O157:H7 infection than culled breeding cattle (cows and bulls). The effects of storage, holding times, chilling, and cooking were included throughout the model to account for organism growth or decline. The Executive Summary is also included separately, here.
