FSIS Risk Assessment for Risk-Based Verification Sampling of Listeria monocytogenes

This report details an innovative use of risk assessments and real-time microbiological data to develop a risk ranking algorithm that, in turn, is used to guide the allocation of L. monocytogenes testing resources among FSIS-regulated establishments that produce post-lethality exposed RTE meat and poultry products. With risk-based verification sampling, FSIS quantitatively characterizes the risk presented by individual establishments under regulation to allocate the Agency’s risk management resources at an appropriate level.
