Many groups in society, including politicians, activists, scientists, and stakeholders, are advocating significant changes to livestock production practices. These changes include modification to stocking densities, limitations on antimicrobial use, and requirements for outdoor "experiences." Such changes may affect animal health. Simultaneously, consumers are demanding virtually risk-free food, and they think food safety should be addressed on-farm as well as during processing, without understanding the relationship between animal health and food safety.

The presentation was given on April 7, 2010 in Hyattsville, MD. The presentation discusses a study that represents the intersection of concerns about the safety of fresh produce and concerns about the environmental impacts of industry-led food safety practices. In the wake of the 2006 E. coli outbreak in spinach from California there was some concern on the environment and scorched earth policy—very aggressive management strategies on farm that were of concern and may be having an environmental impact. This report examines these concerns.

Data is given on the number of food poisoning outbreaks in China from 1990-1999 by cause, and on mortality rates from 1990-1996 from various foodborne bacteria. There is also a history of Bongkrekic acid (BA) food poisoning in Asia, data on BA food poisoning caused by various foods in China (outbreaks, cases, mortality), BA hazard identification, and risk management considerations. There is an exposure assessment of E. coli from fly feces, and the calculated efficacy of hypothetical risk mitigations strategies. There is hazard identification information for fumonisins, with specific risk assessment data on aflatoxins. Information is presented on sugarcane poisoning, including numbers of outbreaks, cases, and deaths, the implication of Arthrinium spp. as the pathogenic fungus, and risk management considerations. Data is also given on the regulated limits of mycotoxins in China, on ochratoxin A produced by Aspergillus, on mould contamination in various beverages including juices, and on mould contamination in liquid functional food. This presentation was given at the 1st International Conference on Microbiological Risk Assessment: Foodborne Hazards, held in Adelphi, MD on July 24-26, 2002. It examines what laboratory models are contributing to the assessment of waterborne exposure to Cryptosporidium oocysts, whether the data from various studies are comparable, and how risk assessment modelers can use this data in a meaningful way. Finally, the results of a study of three C. parvum genotype 2 isolates that were compared using three different model systems are presented. This data includes dose response curves for antibody-negative volunteers and for neonatal mice. The pdf version of this presentation can be accessed here.
